Macaroni and Two Cheeses.

I originally made a post awhile back of this dish as a perfect rainy day meal..which there has not been any lately but I was still craving this version of mac and cheese. I got the recipe originally from Bon Appetit. Their version is made with extra-sharp cheddar cheese, but this time around I decided to make it with an aged Irish Swiss Cheese. It was a perfect compliment to the tangy goat cheese and caramelized shallots.
